Flying Squirrel Foods, LLC is owned and operated by Felicia Nelson and her Earth-loving family.  Together, they are determind to leave this beautiful blue ball a better place for future generations.  That starts with small steps towards sustainability!  FSF aims to provide locally produced, eco-friendly granola, breads, and microgreens to the people of Wisconsin.  All granola and greens are produced in the Nelson family's solar powered home.  Products are packaged using glass, paper, and compostable pouches. Customers can feel great knowing that every FSF is made with love and a planet-centric mindset.

Our Products

Signature Granola Blends

All of FSF signature flavors are made using heart-healthy canola oil or sustainable, organic coconut oil.  Products are always free of palm oil, artificial colors, flavors, high-fructose corn syrup, and preservatives. 

The Original: Our most popular blend of maple oat clusters, pecans, almonds, dried cranberries, raisins, and apricots.

Honey Almond Crumble: No fruit, just a simple blend of honey oat clusters and almonds.

Coconut Caramel Cashew:  A delicate blend of oats, dried coconut and cashews bound by a vegan caramel base.   

Lemon Blueberry Muffin:  Crunchy, maple sweetened clusters with organic dried blueberries, almonds, and a little lemon zest for a light citrus punch.

 

Chocolate Covered Cherry: Maple oat clusters with a hint of almond flavor, organic dried cherries, almonds, and dark chocolate chunks.

Chocolate Peanut Butter Bonanza:  Peanut buttery maple clusters with salted, chopped peanuts, and milk chocolate morsels.  

Super Squirrel Mix:  Maple oat clusters flavored with warm spices, tahini, almonds, pecans, chia seeds, golden raisins, and flaxmeal to super charge your day.

Brian’s Blend:  Kohlrabi, mustard, pak choi,  red acre cabbage

BuZy Mix: Arugula, Mustard,  kale, kohlrabi, and red acre cabbage.

Breads

FSF had a large variety of fresh sourdough breads, including boules, sandwhich loaves, bagels, hambuger buns, and crackers.

 

All breads from the FSF kitchen are made using USDA organic flours and do not contain preservatives, conditioners, gums, or added starches.  While these additives keep mass-produced bread soft and mold free for longer periods of time, they may not be suitable for every diet or lifestyle.  Below are our best tips to make your homemade bread last the longest!  

 

  1. Wait until bread is completely cooled and ready for use before cutting, unless you plan to eat it all in one meal (no judgment).  

  2. Slice only what you need immediately and store the bread cut side down to maintain moisture.

  3. Store fresh bread on the counter in a ziptop bag, plastic wrap, silicon storage bag, or in a beeswax wrap.  These are all great options for maintaining freshness for 1-3 days.

  4. For long-term storage, the freezer is your friend!  Whole buns, bagels, and smaller bread items can go right into the freezer in a ziptop bag. If you are not a fan of plastic, we recommend reusable silicone bags or beeswax wraps.  

 

Whole loaves can be sliced and frozen.  You can then take the slices out as you need them.  They only take 5-10 minutes to thaw out on the counter and they will be fresh as the day they were baked.  You can also toss them right in the toaster to speed up the thawing process.

 

Frozen bread products are best eaten within 3 months.

One of the biggest benefits of being a small business is being able to serve individual customer wants and needs.  If you would like granola without a certain indredient, a specific blend of microgreens, or a type of bread that isn't in our regular rotation, shoot us an email or DM and ask for it!!

While not every request can be honored, the FSF team aims to please and we will do our level best to bring you exactly what you'd like!

All of our zipper bags are home compostable and reseal for optimal freshness.

Health Benefits of Microgreens

While baked goods and greens don’t necessarily seem like a traditional pairing, FSF is overjoyed to offer these eco-friendly, nutrient-packed snacks. These mighty little greens offer up to 40 times the nutrient density found in their mature counterparts! 

According to the Centers for Disease Control (CDC), only 10% of Americans eat the recommended number of fruits and vegetables for optimal health.  Microgreens are a great way to increase vegetable intake while adding flavor and visual appeal to every plate.  In 2023, the Cleveland Clinic published a list of ways that microgreens can improve human health.  Microgreens have potential to : 

  • Help manage type 2 diabetes

  • Improve thinking and reasoning

  • Lower risk of heart disease

  • Prevent cancer

  • Protect vision

  • Reduce risk of anemia

Join our delivery route!

Route Information

The Flying Squirrel Foods delivery route happens every Wednesday and there's still room on the schedule for you! We currently deliver to families and restaurants spanning Waukesha to East Troy.  Just place your order and it will come directly to your doorstep!  

Sign Up Today

Each week, you will receive one text message on Monday with a listing of products available and the order window.  Typically,  you are welcome to place your order anytime between Monday and Wednesday at 10:00am. However bread orders must be recieved by Monday at 5pm.  Interested parties simply need to send an email to flyingsquirrelfoods@gmail.com to sign up!
